Ahhh... I don't know 'bout you but I looooovvve to kickoff Happy Hour with a tempting treat... especially if it's spiked with boozy goodness!
This spirited sweet treat that I'm sharing with you today is of the frozen variety... I'm calling it a Spiked Sweet Cherry Granita! 😜
It's super easy-to-make and only requires a few ingredients. Really!
Mmmmmmm... black cherries and spiced rum.... yummmm! Here, lemme help you have a lil' taste...
Quickly! It's melllttttiinnngggg....
Spiked Sweet Cherry Granita Recipe 🍒🍧
4 cups frozen sweet cherries (not thawed)
1 cup water
2 tablespoons confectioners' sugar (or superfine)
2 tablespoons spiced rum
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
Purée all ingredients together in a blender until smooth. Strain mix through a fine sieve and discard the solid remains.*
Next, pour your granita mixture into a shallow container (like a glass baker or baking pan), cover with an airtight lid (or plastic wrap) and place on a level surface in your freezer. Allow mixture to freeze for a minimum of twelve hours.
Here comes the fun part! Once ready to serve, use a fork and scrape away at the frozen surface until you have a nice, slushy mix. Serve in a chilled glass or dish.

See? Wasn't that simple? Now you're ready to enjoy the "fruits of your labor"... haha!
